Most platforms (Snapdocs, Notarize) allow you to mark dates unavailable so requests don't land in your queue at all.

Compensation

Standard reciprocal: covering notary keeps the full fee for jobs they cover, you do the same when you cover them. Or, less common: a referral fee structure where you take 10-15% for routing the work.
